You will want to edit the SpaceEngineers-Dedicated.cfg which can be found in the "Instance\" directory. Also download and open up your current saves "Sandbox_config.sbc" which can be found in the "Instance\YOUR_SAVE" directory (you can also just simply delete this file and allow a new one to be generated). Then search for the <GameMode> line and replace the Survival option with Creative, or vice versa.

If the issue is isolated to just your character I could not imagine what would be causing the idea. Is anyone else unable to equip the saddles?
